The owner of a new burger vendor which has recently opened in Darlington Indoor Market has welcomed customers to the new eatery.
Ory Vanes, 32, co-owner of Harry’s Burger Joint with his brother Keaton, speaking exclusively to The Northern Echo said they launched the business after their previous venture, SiDeS, did not pan out.
He said the ethos of the business centres on “seasonality” and “locality” – with much of the vendor’s produce and meat sourced from within the market.
Mr Vanes added that 90 per cent of their produce comes from JJ Blair and Sons, while their beef is sourced from David Jackson Butchers.
He said: “It’s all about fresh produce, we don’t like to skimp on produce we use, we don’t like to use frozen when we don’t need to use it.
“Originally, we were on North Road, we only did night service, so it was takeaways only.
“Once we found out Spud Gun were leaving here, we changed from our original business plan to then implement fresh fries into the business, as well as loaded tater tots and smash burgers.
“It’s been fantastic, people have come over to us to see if we’re still the same, we say no, explain who we are.
“The reception we’ve had from people has been fantastic. They love the idea of fresh fries, it’s sort of similar to what Five Guys do.
“Don’t automatically assume we’re a greasy spoon, we’re not a greasy takeaway, we’re a fresh food-fed business, and that’s what it’s all about.”
They added they own PPs, the Urban Deli, have taken over the kitchen side of Hole in the Wall, and will be doing more food with Harry’s Handcrafted Doughnuts after their new kitchen is finished.
He added the eatery’s chips are made fresh every day.
Harry’s Burger Joint opened inside the market on Thursday (April 4) in place of Spud Gun Fries, which left the premises on March 31.
A spokesperson for Darlington Indoor Market said they were overjoyed to have the vendor join their list of businesses in the market.
They said: “We're incredibly happy to have Harry's join the Street Food Hall, and have no doubt of their success.
“The owner, Ory, has a real passion for food and its quality, provenance, & locality.
“His use of suppliers within the market such as JJ Blairs Greengrocers and David Jackson Butchers not only ensures the freshness and authenticity of his food, but also greatly helps support the market as a whole.
“The Street Food Hall is an incubator for new businesses to develop, and Harry's is the latest to start their journey!"
